Ingredients

  • 1 head of green or savoy cabbage
  • 1 cup of greens (kale or collard greens)

  • 1 cup of sliced sweet onions

  • 2 teaspoons of chili powder
  • 1 teaspoon of smoked paprika
  • 2 tablespoons of olive oil or ghee

Instructions

  1. Prepare your ingredients by washing the cabbage, removing tough outer leaves, and slicing into bite-sized pieces. Chop onions and garlic.
  2. Heat your cast-iron skillet over medium-high heat and add a splash of olive oil or ghee.
  3. Sauté the chopped onions until soft and fragrant, about 3-4 minutes. Then add minced garlic and cook for another minute.
  4. Add the sliced cabbage and diced bell peppers, sprinkling in chili powder, smoked paprika, and a generous pinch of salt, stirring to coat.
  5. Cook the mixture untouched for a few minutes to develop charred bits, then stir occasionally for even cooking, covering briefly to help steam the cabbage.
  6. Finish cooking until the cabbage is tender and slightly crispy. Taste and adjust seasoning if necessary, and serve warm.

Notes
