Ingredients
- 1 head of green or savoy cabbage
- 1 cup of greens (kale or collard greens)
- 1 cup of diced bell peppers
- 1 cup of sliced sweet onions
- 4 cloves of minced garlic
- 2 teaspoons of chili powder
- 1 teaspoon of smoked paprika
- 2 tablespoons of olive oil or ghee
Instructions
- Prepare your ingredients by washing the cabbage, removing tough outer leaves, and slicing into bite-sized pieces. Chop onions and garlic.
- Heat your cast-iron skillet over medium-high heat and add a splash of olive oil or ghee.
- Sauté the chopped onions until soft and fragrant, about 3-4 minutes. Then add minced garlic and cook for another minute.
- Add the sliced cabbage and diced bell peppers, sprinkling in chili powder, smoked paprika, and a generous pinch of salt, stirring to coat.
- Cook the mixture untouched for a few minutes to develop charred bits, then stir occasionally for even cooking, covering briefly to help steam the cabbage.
- Finish cooking until the cabbage is tender and slightly crispy. Taste and adjust seasoning if necessary, and serve warm.
Notes
For extra smoky flavor, consider adding a few drops of liquid smoke. Serve as a side or a main dish.
