Ingredients
- 1 pizza dough (homemade or store-bought)
- 1 1/2 cups mozzarella cheese (shredded)
- 1 cup bell peppers (chopped)
- 1 cup mushrooms (sliced)
- 1 cup fresh spinach
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- 1 teaspoon Italian herbs (basil and oregano)
- Salt and pepper to taste
- Optional add-ins: olives, artichokes, or cooked sausage
Instructions
- Preheat your oven to 400°F (200°C). Roll out the pizza dough into a rectangle on a floured surface.
- Heat olive oil in a skillet over medium heat. Sauté minced garlic until fragrant, about 30 seconds.
- Add chopped vegetables to the skillet. Cook until tender, around 5-7 minutes. Season with salt, pepper, and herbs.
- Spread the sautéed vegetables evenly over the rolled-out pizza dough, leaving a small border around the edges. Sprinkle shredded mozzarella on top.
- Roll the dough tightly from one long edge into a log. Pinch to seal the edges.
- Slice the log into 1-inch pinwheels with a sharp knife.
- Arrange the pinwheels on a parchment-lined baking sheet and bake for 15-20 minutes, or until golden brown and bubbling.
- Allow to cool slightly and serve warm with marinara sauce or your favorite dipping sauce.
Notes
Avoid overfilling the pinwheels for easier rolling and a better bake. Watch the baking time as ovens vary.
