Ingredients
- 4 large yellow onions
- 1 lb lean ground beef
- 8 oz fresh button or cremini mushrooms
- 2 cups beef broth
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- 1 cup Gruyère or mozzarella cheese
- 1 cup bread crumbs (panko or crushed crackers)
Instructions
- Caramelize the onions: Slice onions thinly and cook in a skillet over medium heat with butter and salt until golden brown, about 25-30 minutes.
- Cook the beef: Brown the ground beef in another skillet, drain excess fat, and season with salt and pepper.
- Sauté the mushrooms: Add sliced mushrooms to the beef and cook for another 5 minutes.
- Combine the ingredients: In a large mixing bowl, mix caramelized onions, beef, mushrooms, beef broth, thyme, and rosemary.
- Layer in the dish: Preheat oven to 350°F (175°C), pour mixture into a greased casserole dish, sprinkle cheese on top, and add breadcrumbs.
- Bake: Cover with foil and bake for 30 minutes, then remove foil and bake for another 10-15 minutes until cheese is bubbling.
- Serve and enjoy: Let cool for a few minutes before serving with a fresh salad or roasted veggies.
Notes
For a lighter option, substitute ground turkey or lentils. Use shiitake or portobello mushrooms for added depth.
