Ingredients
- 4 boneless chicken breasts or thighs
- 1 cup dill pickles, sliced
- 1 cup freshly grated Parmesan cheese
- 1 cup breadcrumbs (regular, panko, or crushed crackers)
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pound chicken to an even thickness for uniform cooking.
- Beat eggs in one bowl and mix breadcrumbs with Parmesan and spices in another bowl.
- Dip chicken in eggs, then coat with the breadcrumb mixture, pressing firmly.
- Place slices of dill pickle on top of the coated chicken, securing with toothpicks if needed.
- Bake for 25-30 minutes until golden brown, optionally use the broiler for extra crispiness.
- Let rest for a few minutes before serving with extra pickle slices and dipping sauces.
Notes
For added flavor, consider using different spices or substitute with bread and butter pickles for a sweeter taste.
