Instructions
- Prepare the broth by combining it with soy sauce and mirin in a large pot over medium heat.
- Cook the udon noodles according to package instructions, then drain and set aside.
- Sauté chopped garlic, ginger, and your choice of vegetables in a separate skillet with sesame oil for about 3-4 minutes.
- Add the mushrooms and cook until soft.
- Combine the sautéed vegetables and mushrooms with the simmering broth for another 5 minutes.
- Stir in the cooked udon noodles and any additional protein, heating through for 2-3 minutes.
- Serve in bowls, garnished with scallions, sesame seeds, and a drizzle of sesame oil.
