- 1 pound ground turkey
- 1/4 cup teriyaki sauce
- 1 cup bell peppers, chopped
- 1 cup broccoli, chopped
- 1 cup carrots, sliced
- 2 cups cooked white or brown rice
- 1 tablespoon oil
- 1 tablespoon sesame seeds
- 1/4 cup green onions, chopped
Instructions
- Prepare the rice by cooking it according to package instructions with a pinch of salt and vinegar for extra flavor.
- Sauté the vegetables in a large skillet over medium heat with oil for about 5-7 minutes until tender yet crisp.
- Cook the ground turkey by pushing the veggies to the side and browning the turkey for about 5-6 minutes.
- Add the teriyaki sauce over the turkey, mix well, and let it simmer until the sauce thickens slightly.
- Assemble the bowls by layering rice, then topping with the turkey and vegetable mixture.
- Serve hot, garnished with sesame seeds and green onions.
Notes
For a vegetarian option, substitute ground turkey with tofu or chickpeas and marinate them in teriyaki sauce.
