Ingredients

  • Pasta (penne or rotini)
  • Fresh spinach
  • Artichoke hearts (canned or frozen)
  • Cream cheese
  • Cheddar cheese
  • Parmesan cheese
  • Garlic (minced)
  • Fresh herbs (parsley or basil)
  • Olive oil
  • Butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook your pasta in a large pot of salted boiling water until al dente.
  3. Sauté the minced garlic in olive oil, then add the spinach and cook until wilted.
  4. Prepare the cream sauce by melting cream cheese and mixing in reserved pasta water.
  5. Combine the drained pasta with the creamy spinach-artichoke mixture and half the cheese.
  6. Transfer the mixture to a greased baking dish and top with remaining cheese.
  7. Bake for 25-30 minutes until golden and bubbly.
  8. Serve after letting it sit for 5 minutes.
