- 2 Bay Leaves

Instructions
- Sear the meat: Season your chuck roast with salt and pepper, then sear it on all sides in a hot skillet until golden brown.
- Prepare the vegetables: Chop onions, carrots, and potatoes into uniform pieces.
- Layer your ingredients: In the slow cooker, place the seared beef at the bottom, followed by onions and garlic, then carrots and potatoes. Pour beef broth over everything and sprinkle with herbs.
- Set it and forget it: Cover tightly and cook on low for 6-8 hours or high for about 4 hours.
- Final touches: Once cooked, let the meat rest for a few minutes, then slice and adjust sauce seasoning as needed.
- Serve: Plate the pot roast with veggies, drizzling the sauce on top.

For a vegetarian option, replace the meat with hearty mushrooms or jackfruit. Use good-quality broth for maximum flavor.
