Ingredients

  • 1 lb boneless chicken thighs
  • 12 oz fresh green beans, trimmed
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (parsley or thyme) for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then place it in the hot pan to sear for 5-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  2. Add a little more olive oil if needed to the same pan. Toss in the minced garlic, stirring often for about 30 seconds until fragrant. Then add your green beans.
  3. Squeeze in the lemon juice and add the chicken broth. Bring it to a gentle simmer.
  4. Nestle the chicken back into the pan with the green beans. Cook together for another 5 minutes to meld flavors.
  5. Remove from heat, then sprinkle with lemon zest and fresh herbs before serving.

Notes
