Ingredients
- 1 lb boneless chicken thighs
- 12 oz fresh green beans, trimmed
- 4 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 cup chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (parsley or thyme) for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then place it in the hot pan to sear for 5-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
- Add a little more olive oil if needed to the same pan. Toss in the minced garlic, stirring often for about 30 seconds until fragrant. Then add your green beans.
- Squeeze in the lemon juice and add the chicken broth. Bring it to a gentle simmer.
- Nestle the chicken back into the pan with the green beans. Cook together for another 5 minutes to meld flavors.
- Remove from heat, then sprinkle with lemon zest and fresh herbs before serving.
Notes
Serve family-style from the pan with herbed rice or crusty bread. Pairs well with a chilled white wine.
