Ingredients
- 1 lb boneless chicken (breast or thighs)
- 1 cup fresh tomatoes, diced
- 1 jalapeño, diced
- 1/2 red onion, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Marinate the chicken: In a bowl, combine olive oil, lime juice, cumin, salt, and pepper. Place the chicken in this mixture, ensuring it’s fully coated. Let it sit for at least 30 minutes, or overnight for maximum flavor.
- Prepare the pico de gallo: Dice the tomatoes, jalapeños, and red onion while finely chopping the cilantro. Mix these together in a bowl and add lime juice, salt, and pepper to taste. Set aside.
- Cook the chicken: In a skillet over medium heat, cook the marinated chicken for about 5-7 minutes on each side until golden and cooked through.
- Combine and serve: Once the chicken is cooked, allow it to rest, slice it, and top with the fresh pico de gallo. Serve warm with sides like rice or tortillas.
