- 2 lbs boneless chicken (breast or thighs)

- 1/4 cup soy sauce
- 2 cloves fresh garlic, minced
- 1 tbsp fresh ginger, minced
- 1 cup coconut milk or chicken broth
- 2 tbsp brown sugar or honey
- 1 cup bell peppers, sliced
- 1 cup snap peas or broccoli
- Fresh cilantro or green onions for garnish
Instructions
- Prep your ingredients: Chop the chicken into bite-sized pieces and set aside the garlic, ginger, and vegetables.
- Heat the pan: In a large skillet over medium heat, add a splash of oil. Add garlic and ginger, sauté for about 30 seconds until fragrant.
- Cook the chicken: Add chicken pieces to the pan, stirring well. Cook for about 5-7 minutes, or until golden brown and cooked through.
- Make the sauce: In a bowl, whisk together peanut butter, soy sauce, and coconut milk (or broth) until smooth. Add chili paste if desired.
- Combine: Pour the sauce over the chicken, stirring to coat evenly. Add vegetables and cook for another 3-5 minutes.
- Finish it off: Taste and adjust seasonings, adding lime juice or sweetener if needed.
- Serve: Plate the Peanut Butter Chicken over rice or noodles and garnish with fresh herbs.
Notes
For a vegetarian option, substitute chicken with tofu. Adjust spice levels to taste by altering pepper content.
