- 1 cup extra virgin olive oil
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- Zest of 2 oranges
- ¾ cup fresh orange juice
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round cake pan with olive oil and set aside.
- Whisk together the flour, baking powder, and salt in a bowl.
- Beat the eggs with granulated sugar in another bowl. Stir in the olive oil, orange zest, and orange juice.
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar or drizzle with orange glaze if desired.
Notes
For optimal results, use room temperature ingredients and don’t overmix the batter. Allow cake to cool before slicing for best flavor.
