A delightful and nostalgic cake bursting with the freshness of strawberries and layered with cream cheese frosting.

Ingredients

  • 2-3 cups Fresh Strawberries, pureed or sliced
  • 2 1/2 cups All-Purpose Flour
  • 1 3/4 cups Granulated Sugar
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Unsalted Butter, softened
  • 4 large Eggs
  • 2 tsp Vanilla Extract
  • 8 oz Cream Cheese, softened
  • 4 cups Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. Whisk together the flour, baking powder, and salt until combined.
  4. Cream together softened butter and sugar until light and fluffy—about 4-5 minutes.
  5. Beat in the eggs one at a time, followed by the vanilla extract.
  6. Fold in your pureed or sliced strawberries gently.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack.
  10. Beat cream cheese and butter until creamy, then gradually add powdered sugar until fluffy.
  11. Add a splash of vanilla and mix until fully incorporated.
  12. Layer the first cake on a plate, spread frosting on top, and place the second layer on top.
  13. Frost the top and sides of the cake, decorate with sliced strawberries.

Notes

For an alternate flavor, consider adding lemon zest or almond extract to the batter.
