- 2-3 cups Fresh Strawberries, pureed or sliced
- 2 1/2 cups All-Purpose Flour
- 1 3/4 cups Granulated Sugar
- 1 tbsp Baking Powder
- 1/2 tsp Salt
- 1 cup Unsalted Butter, softened
- 4 large Eggs
- 2 tsp Vanilla Extract
- 8 oz Cream Cheese, softened
- 4 cups Powdered Sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- Whisk together the flour, baking powder, and salt until combined.
- Cream together softened butter and sugar until light and fluffy—about 4-5 minutes.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Fold in your pureed or sliced strawberries gently.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack.
- Beat cream cheese and butter until creamy, then gradually add powdered sugar until fluffy.
- Add a splash of vanilla and mix until fully incorporated.
- Layer the first cake on a plate, spread frosting on top, and place the second layer on top.
- Frost the top and sides of the cake, decorate with sliced strawberries.
Notes
For an alternate flavor, consider adding lemon zest or almond extract to the batter.
