  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 lb Ground Turkey
  • 1 Onion, chopped
  • 3 Garlic cloves, minced
  • 4 Carrots, chopped
  • 2 Celery stalks, chopped
  • 1 Bell Pepper, chopped
  • 4 cups Chicken or Vegetable Broth
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Thyme
  • 1 tsp Dried Oregano
  • 2 Bay Leaves
  • Salt and Pepper, to taste
  • Fresh herbs (Parsley or Cilantro) for garnish

Instructions

  1. Sauté the onions in a large pot with olive oil over medium heat until translucent, about 5 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  2. Add the ground turkey, breaking it up and cooking until golden brown, about 7-10 minutes. Season with salt and pepper.
  3. Incorporate the chopped carrots, celery, and bell pepper. Stir to combine and soften for about 5 minutes.
  4. Pour in the broth, add the tomato paste, and stir well. Toss in the dried herbs and bay leaves, bringing the soup to a gentle simmer.
  5. Simmer for at least 20-30 minutes, allowing flavors to meld. Taste and adjust seasoning as needed.
  6. Finish with fresh herbs and a squeeze of lemon juice before serving.
  7. Serve hot in bowls, optionally paired with crusty bread or a salad.
