- 1 lb Ground Turkey
- 1 Onion, chopped
- 3 Garlic cloves, minced
- 4 Carrots, chopped

- 2 tbsp Tomato Paste
- 1 tsp Dried Thyme
- 1 tsp Dried Oregano
- 2 Bay Leaves
- Salt and Pepper, to taste
- Fresh herbs (Parsley or Cilantro) for garnish
Instructions
- Sauté the onions in a large pot with olive oil over medium heat until translucent, about 5 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- Add the ground turkey, breaking it up and cooking until golden brown, about 7-10 minutes. Season with salt and pepper.
- Incorporate the chopped carrots, celery, and bell pepper. Stir to combine and soften for about 5 minutes.
- Pour in the broth, add the tomato paste, and stir well. Toss in the dried herbs and bay leaves, bringing the soup to a gentle simmer.
- Simmer for at least 20-30 minutes, allowing flavors to meld. Taste and adjust seasoning as needed.
- Finish with fresh herbs and a squeeze of lemon juice before serving.
- Serve hot in bowls, optionally paired with crusty bread or a salad.
