Ingredients
- 2 lbs Yukon gold or red potatoes, peeled and cut into wedges
- 1/4 cup extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 4 cloves garlic, minced
- 2 tsp dried oregano
- Salt, to taste
- Pepper, to taste
- Optional: Chopped parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cut the potatoes into wedges.
- Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper in a large bowl.
- Toss the wedges in the marinade until coated.
- Spread the potato wedges in a single layer on a baking sheet.
- Roast for about 45–60 minutes, flipping halfway through until golden brown and tender.
- Squeeze additional lemon juice over before serving.
- Garnish with chopped parsley if desired.
Notes
Let the potatoes marinate for at least 30 minutes for enhanced flavor.
