Instructions
- Cook the Soba Noodles: Boil water in a large pot with a pinch of salt, then add the soba noodles and cook according to package instructions (about 4-5 minutes). Drain and rinse with cold water.
- Prepare the Chicken: If using leftover chicken, shred it into bite-sized pieces. For raw chicken, season and grill or sauté until cooked through, then cool and shred.
- Make the Dressing: In a small bowl, whisk together peanut butter, soy sauce, lime juice, and honey until smooth. Adjust consistency with water if necessary.
- Combine Ingredients: In a large bowl, mix soba noodles, chicken, and vegetables. Pour dressing over and toss gently to coat.
- Garnish and Serve: Top with peanuts and herbs. Serve chilled or at room temperature.
Notes
You can substitute chicken with tofu or shrimp for different dietary preferences. Letting the salad chill for about 30 minutes allows the flavors to meld beautifully.
