Ingredients

  • 1 ½ cups almond flour
  • 1 ¾ cups powdered sugar
  • ½ cup cocoa powder
  • 3 large egg whites
  • ¼ cup granulated sugar
  • 1 teaspoon cream of tartar
  • ½ cup unsalted butter (for filling)
  • 4 ounces dark chocolate (for filling)

Instructions

  1. Prepare your workspace by preheating your oven to 300°F (150°C) and lining a baking tray with parchment paper.
  2. Mix the dry ingredients by combining almond flour, powdered sugar, and cocoa powder in a bowl and sift together.
  3. Whip the egg whites and cream of tartar in a separate bowl until frothy, then gradually add granulated sugar and whip until stiff peaks form.
  4. Incorporate the sifted dry ingredients gently into the whipped egg whites, being careful not to overmix.
  5. Pipe small circles of the macaron batter onto the prepared tray, leaving space between them, and let them sit for 30 minutes.
  6. Bake in the oven for 15-18 minutes until they don’t stick when lifted from parchment.
  7. Cool the shells completely before carefully peeling them away from the parchment.
  8. Prepare the filling by melting chocolate and mixing it with butter.
  9. Assemble the macarons by pairing similar-sized shells, piping the filling onto one and sandwiching with the other.
  10. Let them rest in the refrigerator for at least 24 hours before serving for best flavor.
