Delightful Chicken Pesto Meatballs are bursting with flavor and perfect for any occasion, whether as an appetizer or a main dish.

Ingredients

  • 1 lb (450g) Ground Chicken
  • 1/2 cup (120g) Pesto
  • 1/2 cup (60g) Breadcrumbs
  • 1 Large Egg
  • 3 Cloves Garlic, minced
  • 1/4 cup (25g) Grated Parmesan cheese
  • Salt and Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine ground chicken, pesto, breadcrumbs, minced garlic, egg, Parmesan, salt, and pepper in a large mixing bowl.
  3. Mix until well combined, but don’t overmix.
  4. Form meatballs about the size of a golf ball.
  5. Place them on a parchment-lined baking sheet, leaving space between each meatball.
  6. Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let meatballs rest for a few minutes before serving.

Notes

For extra flavor, sear the meatballs in a skillet before baking for a delicious crust. They’re fantastic served over pasta or in a meatball sandwich.
