Ingredients
- 1 lb (450g) Ground Chicken
- 1/2 cup (120g) Pesto
- 1/2 cup (60g) Breadcrumbs
- 1 Large Egg
- 3 Cloves Garlic, minced
- 1/4 cup (25g) Grated Parmesan cheese
- Salt and Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Combine ground chicken, pesto, breadcrumbs, minced garlic, egg, Parmesan, salt, and pepper in a large mixing bowl.
- Mix until well combined, but don’t overmix.
- Form meatballs about the size of a golf ball.
- Place them on a parchment-lined baking sheet, leaving space between each meatball.
- Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
- Let meatballs rest for a few minutes before serving.
Notes
For extra flavor, sear the meatballs in a skillet before baking for a delicious crust. They’re fantastic served over pasta or in a meatball sandwich.
