Deliciously moist and wholesome Banana Oat Muffins filled with the rich flavor of ripe bananas and hearty oats.

Ingredients

  • 3 ripe bananas
  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch salt
  • 2 eggs
  • ½ cup brown sugar
  • 1/3 cup melted butter or oil
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line the muffin tin with paper liners or grease it.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Sift the dry ingredients together in a separate bowl.
  4. Combine wet ingredients with the mashed bananas until well mixed.
  5. Gradually fold in the dry ingredients until just combined.
  6. Optional: Fold in walnuts, pecans, or chocolate chips if desired.
  7. Divide the batter evenly among muffin cups, filling them 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the pan for a few minutes, then transfer to a wire rack.

Notes

For a healthier version, consider using whole wheat flour or reducing sugar. Serve warm with butter or honey.
