Ingredients
- 3 ripe bananas
- 1 ½ cups all-purpose flour
- 1 cup rolled oats
- 1 tsp baking powder
- 1 tsp baking soda
- 1 pinch salt
- 2 eggs
- ½ cup brown sugar
- 1/3 cup melted butter or oil
- 1 tsp vanilla extract
- ½ cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line the muffin tin with paper liners or grease it.
- Mash the ripe bananas in a large mixing bowl until smooth.
- Sift the dry ingredients together in a separate bowl.
- Combine wet ingredients with the mashed bananas until well mixed.
- Gradually fold in the dry ingredients until just combined.
- Optional: Fold in walnuts, pecans, or chocolate chips if desired.
- Divide the batter evenly among muffin cups, filling them 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the pan for a few minutes, then transfer to a wire rack.
Notes
For a healthier version, consider using whole wheat flour or reducing sugar. Serve warm with butter or honey.
