- 1 lb smoked sausage (Andouille or Kielbasa)
- 1 cup rice or pasta
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, chopped
- 2 cups chicken or vegetable broth
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Prepare your ingredients: Slice the smoked sausage into bite-sized pieces. Dice the onions, garlic, and bell peppers; chop any additional veggies you’d like to include.
- Sauté aromatics: In a large skillet or pot, heat a tablespoon of oil over medium heat. Add the onions and garlic, letting them cook until fragrant and golden, about 2-3 minutes.
- Brown the sausage: Add the sliced smoked sausage into the pan and cook until each piece develops a lovely golden brown crust, about 5 minutes.
- Add vegetables: Toss in your diced bell peppers and any other vegetables, allowing them to soften for about 5 minutes.
- Introduce broth and rice/pasta: Pour in the broth and bring it to a gentle simmer. If using rice, add it now, cover, and allow it to cook according to package instructions. For pasta, you can add it directly; just adjust the liquid accordingly.
- Season blissfully: Stir in your herbs and spices, adjusting to your taste preferences.
- Finish and serve: Once everything is cooked through and the flavors melded together, serve hot, garnished with freshly chopped herbs if desired.
Notes
Feel free to swap rice for quinoa or pasta for a gluten-free alternative. Adjust seasons to your taste for the perfect dish.
