Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon mint extract (or fresh mint)
  • Chocolate Kisses for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs and mint extract, mixing until fully combined.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Gradually add the dry mixture to the creamed mixture and mix until just combined.
  6. Scoop tablespoons of dough, roll into balls, and roll each in granulated sugar.
  7. Place the dough balls on ungreased baking sheets about 2 inches apart.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Remove from the oven and immediately press a chocolate kiss into the center of each cookie.
  10. Cool for a few minutes on the baking sheet before transferring to a wire rack.

Notes

Cookies may look slightly underbaked but will harden as they cool. Use room temperature butter for best results.
