Ingredients
- 2 ¾ cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon mint extract (or fresh mint)
- Chocolate Kisses for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs and mint extract, mixing until fully combined.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the dry mixture to the creamed mixture and mix until just combined.
- Scoop tablespoons of dough, roll into balls, and roll each in granulated sugar.
- Place the dough balls on ungreased baking sheets about 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden.
- Remove from the oven and immediately press a chocolate kiss into the center of each cookie.
- Cool for a few minutes on the baking sheet before transferring to a wire rack.
Notes
Cookies may look slightly underbaked but will harden as they cool. Use room temperature butter for best results.
