- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- ¼ cup sugar
- 24 ounces cream cheese, softened
- 1 cup sugar
- ½ cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup chopped pecans
Instructions
- Preheat your oven to 325°F (163°C).
- Prepare the crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan.
- Make the filling: Blend softened cream cheese and sugar on medium speed until smooth. Add sour cream, vanilla extract, and eggs one at a time, mixing until just combined.
- Add the chopped pecans and gently fold them into the creamy filling.
- Bake for about 55-60 minutes until the center is set yet slightly jiggly.
- Cool at room temperature for about an hour, then refrigerate for at least four hours or overnight.
- Serve: Release from the springform pan, slice, and garnish with additional pecans and whipped cream.
Notes
Using a water bath can help prevent cracks in the cheesecake. Make sure all ingredients are at room temperature before mixing.
