Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup melted butter
  • ¼ cup sugar
  • 24 ounces cream cheese, softened
  • 1 cup sugar
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Prepare the crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan.
  3. Make the filling: Blend softened cream cheese and sugar on medium speed until smooth. Add sour cream, vanilla extract, and eggs one at a time, mixing until just combined.
  4. Add the chopped pecans and gently fold them into the creamy filling.
  5. Bake for about 55-60 minutes until the center is set yet slightly jiggly.
  6. Cool at room temperature for about an hour, then refrigerate for at least four hours or overnight.
