Ingredients

  • 3-4 lb chuck roast
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 4 cups beef broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper, to taste

Instructions

  1. Prepare the ingredients: Start by patting your chuck roast dry with paper towels, ensuring a nice sear later on. Chop your onions, carrots, and potatoes into even pieces to ensure uniform cooking.
  2. Sear the roast: Heat a skillet over medium-high heat. Add a touch of oil and sear the roast on all sides until golden brown.
  3. Layer in the ingredients: Place the onions at the bottom of your crock pot, followed by the seared chuck roast. Scatter the chopped carrots and potatoes around it.
  4. Add aromatics: Sprinkle your minced garlic and herbs atop the roast. Pour in the beef broth, and season generously with salt and pepper.
  5. Cook low and slow: Set your slow cooker to low and cook for 8 hours, or set it to high for about 4–5 hours.
