Ingredients
- 3-4 lb chuck roast
- 2 onions, chopped
- 4 cloves garlic, minced
- 4 carrots, chopped
- 4 potatoes, chopped
- 4 cups beef broth
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper, to taste
Instructions
- Prepare the ingredients: Start by patting your chuck roast dry with paper towels, ensuring a nice sear later on. Chop your onions, carrots, and potatoes into even pieces to ensure uniform cooking.
- Sear the roast: Heat a skillet over medium-high heat. Add a touch of oil and sear the roast on all sides until golden brown.
- Layer in the ingredients: Place the onions at the bottom of your crock pot, followed by the seared chuck roast. Scatter the chopped carrots and potatoes around it.
- Add aromatics: Sprinkle your minced garlic and herbs atop the roast. Pour in the beef broth, and season generously with salt and pepper.
- Cook low and slow: Set your slow cooker to low and cook for 8 hours, or set it to high for about 4–5 hours.
- Finish touches: About 30 minutes before serving, taste the broth and adjust any seasonings. If you’d like a thicker gravy, mix a tablespoon of cornstarch with water and stir it into the broth during the last half hour of cooking.
- Serve: Once done, shred the meat with two forks or slice it. Serve it over mashed potatoes or with crusty bread. Ladle some aromatic broth over everything!
