Ingredients

  • 1 lb Boneless chicken (breast or thighs)
  • 1/2 cup Cornstarch
  • 2 Eggs
  • 1 cup Panko breadcrumbs
  • 3 cloves Fresh garlic, minced
  • 1/2 cup Mayonnaise
  • 1/2 cup Sweet chili sauce
  • 1 tbsp Sriracha (optional)
  • 1 tbsp Lime juice
  • 2 Green onions, chopped for garnish

Instructions

  1. Prep the chicken: Cut chicken into bite-sized pieces.
  2. Create the crunch: Set up a breading station with cornstarch, beaten eggs, and a mixture of panko breadcrumbs with salt.
  3. Dredge the chicken: Coat chicken pieces in cornstarch, dip in egg wash, then roll in panko.
  4. Fry it up: Heat oil in a skillet and fry chicken until golden brown, about 5–7 minutes in batches.
  5. Prepare the Bang Bang sauce: Mix mayonnaise, sweet chili sauce, Sriracha, and lime juice in a bowl.

  7. Garnish and serve: Place on a platter, sprinkle green onions, and serve immediately.

Notes
