Ingredients
- 1 lb Boneless chicken (breast or thighs)
- 1/2 cup Cornstarch
- 2 Eggs
- 1 cup Panko breadcrumbs
- 3 cloves Fresh garlic, minced
- 1/2 cup Mayonnaise
- 1/2 cup Sweet chili sauce
- 1 tbsp Sriracha (optional)
- 1 tbsp Lime juice
- 2 Green onions, chopped for garnish
Instructions
- Prep the chicken: Cut chicken into bite-sized pieces.
- Create the crunch: Set up a breading station with cornstarch, beaten eggs, and a mixture of panko breadcrumbs with salt.
- Dredge the chicken: Coat chicken pieces in cornstarch, dip in egg wash, then roll in panko.
- Fry it up: Heat oil in a skillet and fry chicken until golden brown, about 5–7 minutes in batches.
- Prepare the Bang Bang sauce: Mix mayonnaise, sweet chili sauce, Sriracha, and lime juice in a bowl.
- Tossing it all together: Drain fried chicken and toss in Bang Bang sauce while warm.
- Garnish and serve: Place on a platter, sprinkle green onions, and serve immediately.
Notes
For a vegetarian twist, substitute chicken with tofu. Adjust the sauce’s spiciness to your preference.
