Ingredients
- 1 lb boneless chicken breasts, diced
- 8 oz pasta (spaghetti, penne, or fettuccine)
- 2 tbsp olive oil
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 cup fresh spinach
- 1 bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1 tsp fresh basil, chopped
- 1 tsp fresh oregano, chopped
- 1 cup heavy cream or chicken broth
- 1/2 cup grated parmesan cheese
Instructions
- Prepare the ingredients by chopping vegetables and dicing the chicken.
- Cook the pasta in boiling salted water until al dente, reserving a cup of pasta water.
- Sauté garlic and onion in olive oil and butter over medium heat until translucent.
- Add the chicken, seasoning with salt and pepper, and cook until golden brown.
- Stir in the vegetables, cooking until softened.
- Pour in cream or broth, simmering until thickened and adding reserved pasta water as needed.
- Combine the pasta with the sauce, tossing gently.
- Finish with fresh herbs and cheese before serving warm.
Notes
For a lighter version, substitute heavy cream with low-fat milk and cornstarch.
