Ingredients
- 2 boneless chicken breasts or thighs
- 4 cloves fresh garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 8 oz white button or cremini mushrooms, sliced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- ¼ cup fresh parsley or thyme, chopped
- Salt and pepper to taste
Instructions
- Preparation: Start by cleaning and slicing your mushrooms. Mince the garlic and chop your herbs.
- Sautéing: In a large skillet, heat olive oil and butter over medium heat. Toss in the mushrooms and season with salt and pepper. Sauté until golden brown, about 5-7 minutes.
- Garlic Magic: Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Building the Sauce: Pour in the chicken broth, scraping the skillet to release any browned bits.
- Creaminess: Stir in the heavy cream and let it simmer gently for around 3-5 minutes.
- Chicken Time: In another pan, season chicken pieces with salt and pepper. Sear until golden brown, about 6-8 minutes per side.
- Marrying Flavors: Toss your chicken into the sauce and sprinkle with fresh herbs. Let them mingle for a minute.
- Serving: Serve hot over rice or creamy mashed potatoes.
Notes
Use Greek yogurt with a splash of milk as a substitute for heavy cream if desired.
