Ingredients

  • 4 medium russet potatoes, cubed
  • 1 lb smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 2 tbsp ranch seasoning
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Optional: bell peppers or green onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cube the potatoes into bite-sized pieces.
  3. Sauté the sliced smoked sausage in olive oil over medium heat until browned, about 5–7 minutes, then add the minced garlic for the last minute.
  4. Mix together the sautéed sausage, cubed potatoes, ranch seasoning, and shredded cheese in a large bowl until well-coated.
  5. Spread the mixture on a baking sheet and bake for 30–35 minutes until the potatoes are fork-tender and golden.
  6. Serve warm and optionally top with chopped green onions or fresh herbs.
