Ingredients
- 1 lb Boneless, skinless chicken (breast or thighs)
- 1 cup Sharp cheddar cheese, shredded
- 1 cup Mozzarella cheese, shredded
- 2 Cloves fresh garlic, minced
- 4 Large flour tortillas
- 1 Medium bell pepper, sliced
- 1 Medium onion, sliced
- Salt and pepper, to taste
- Olive oil, for cooking
- Fresh herbs (parsley, basil, or cilantro), chopped
Instructions
- Heat a skillet over medium heat. Add olive oil and minced garlic, sauté for a minute until fragrant.
- Add the chicken to the skillet, seasoning with salt and pepper. Cook for 5-7 minutes on each side until fully cooked.
- Remove the chicken from the skillet and let it rest for a few minutes, then slice into cubes.
- Sauté the sliced bell peppers and onions in the same skillet until tender.
- Combine the chicken, sautéed vegetables, shredded cheeses, and fresh herbs in a large bowl. Adjust seasoning to taste.
- Warm the tortillas lightly, then fill them with the chicken mixture and wrap snugly.
- Return the wraps to the skillet seam side down and cook for a few minutes on each side until golden brown and crispy.
- Serve warm with your choice of dipping sauces.
