Delightful carrot cake donuts with cream cheese icing, perfect for Easter celebrations.

Ingredients

  • 2 cups freshly grated carrots
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese (softened) for icing
  • 1 cup powdered sugar for icing
  • 1 tsp vanilla extract for icing

Instructions

  1. Preheat your oven to 350°F. Grease your donut pan.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, spices, and salt.
  3. In another bowl, mix the wet ingredients: grated carrots, eggs, and oil. Stir until combined.
  4. Gradually fold the wet mixture into the dry ingredients, being careful not to overmix.
  5. If you’re using nuts, fold them in gently now.
  6. Fill each donut mold about halfway.
  7. Bake for 12-15 minutes, or until a toothpick comes out clean.
  8. While cooling, prepare the icing by mixing cream cheese, powdered sugar, and vanilla extract.
  9. Once cooled, dip the tops of the donuts in icing or spread it on.

Notes

Let donuts cool longer if they’re too soft when taken out of the pan.
