Ingredients
- 2 cups freshly grated carrots
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 2 large eggs
- ½ cup vegetable oil
- ½ cup chopped walnuts or pecans (optional)
- 8 oz cream cheese (softened) for icing
- 1 cup powdered sugar for icing
- 1 tsp vanilla extract for icing
Instructions
- Preheat your oven to 350°F. Grease your donut pan.
- In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, spices, and salt.
- In another bowl, mix the wet ingredients: grated carrots, eggs, and oil. Stir until combined.
- Gradually fold the wet mixture into the dry ingredients, being careful not to overmix.
- If you’re using nuts, fold them in gently now.
- Fill each donut mold about halfway.
- Bake for 12-15 minutes, or until a toothpick comes out clean.
- While cooling, prepare the icing by mixing cream cheese, powdered sugar, and vanilla extract.
- Once cooled, dip the tops of the donuts in icing or spread it on.
Notes
Let donuts cool longer if they’re too soft when taken out of the pan.
