- 1 cup freshly grated carrots
- 8 oz full-fat cream cheese
- 3/4 cup granulated sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup chopped walnuts or pecans
Instructions
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
- Combine the grated carrots, cream cheese, eggs, granulated sugar, and flour in a mixing bowl.
- Add the spices and nuts, gently folding everything together until smooth.
- Spoon the batter into each mini muffin cup, filling them about three-quarters full.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Cool the bites slightly before transferring to a wire rack.
- Frost with cream cheese frosting once completely cool.
- Garnish with finely chopped nuts or candied ginger.
Notes
Best served garnished with fresh berries or edible flowers. Can be paired with whipped cream or yogurt.
