Delightful little bites combining carrot cake and cheesecake, perfect for Easter gatherings.

Ingredients

  • 1 cup freshly grated carrots
  • 8 oz full-fat cream cheese
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. Combine the grated carrots, cream cheese, eggs, granulated sugar, and flour in a mixing bowl.
  3. Add the spices and nuts, gently folding everything together until smooth.
  4. Spoon the batter into each mini muffin cup, filling them about three-quarters full.
  5. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  6. Cool the bites slightly before transferring to a wire rack.
  7. Frost with cream cheese frosting once completely cool.
  8. Garnish with finely chopped nuts or candied ginger.

Notes
