A delicious and nostalgic treat made with fresh carrots and warm spices, topped with creamy frosting, perfect for family gatherings.

  • Total Time: 45 minutes
  • Yield: 12 servings

Ingredients

  • 2 cups shredded carrots
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup vegetable oil or melted butter
  • 8 oz cream cheese
  • 1 cup powdered sugar
  • Chopped walnuts or pecans (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish or line it with parchment paper for easy removal.
  2. Prepare the carrots by shredding them using a grater or food processor.
  3. Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Combine the wet ingredients: In a separate bowl, whisk together the sugars, eggs, and oil (or melted butter) until well-combined and creamy.
  5. Combine the wet and dry ingredients gently until just combined. Then, fold in the shredded carrots until evenly incorporated.
  6. Bake the mixture in the prepared baking dish for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool completely in the pan before frosting with a mixture of cream cheese and powdered sugar.
  8. Slice into squares, serve, and enjoy!

Notes

For an extra touch, consider sprinkling chopped walnuts or pecans on top of the cream cheese frosting.
