- 2 cups shredded carrots

Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish or line it with parchment paper for easy removal.
- Prepare the carrots by shredding them using a grater or food processor.
- Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine the wet ingredients: In a separate bowl, whisk together the sugars, eggs, and oil (or melted butter) until well-combined and creamy.
- Combine the wet and dry ingredients gently until just combined. Then, fold in the shredded carrots until evenly incorporated.
- Bake the mixture in the prepared baking dish for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool completely in the pan before frosting with a mixture of cream cheese and powdered sugar.
- Slice into squares, serve, and enjoy!
