  • 1 packet of unflavored gelatin
  • 1 cup of fruit juice (orange, cranberry, etc.)
  • Sweetener (honey, agave, or sugar to taste)
  • Fresh fruits (optional, diced berries or citrus segments)
  • Herbs (optional, like mint or basil)

Instructions

  1. Dissolve the gelatin: In a small bowl, sprinkle your unflavored gelatin over 1/4 cup of cold water. Let it bloom for about 5 minutes until it swells.
  2. Heat your juice: Bring 1 cup of juice to a simmer over medium heat, adding sweetener if needed, without boiling.
  3. Combine: Remove the hot juice from heat and stir in the bloomed gelatin until completely dissolved.
  4. Add fresh fruits: Pour some mixture into molds, add fruit pieces, then fill the remainder of the molds.
  5. Chill: Cool at room temperature for 20 minutes, then chill in the fridge for 2-4 hours until set.
  6. Unmold: Release the cubes by running a knife along the edges and flipping the molds onto a plate.

Notes

If using plastic molds, dipping them briefly in warm water helps to release the cubes easily.
