Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a loaf pan.
- Cream butter and sugar together until light and fluffy.
- Add eggs one at a time, mixing until fully incorporated before adding the next.
- Mix in the lemon juice and zest.
- Whisk together flour and baking powder in a separate bowl, then gradually add to the wet mixture, alternating with small amounts of milk for a smooth batter.
- Pour the batter into your prepared pan, smoothing the top with a spatula.
- Bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
- Prepare a lemon glaze by mixing powdered sugar with a little lemon juice and drizzle it over your cooled loaf before serving.
Notes
For a heartier loaf, consider using whole wheat flour. You can also replace granulated sugar with honey for natural sweetness.
