- 1 lb pork tenderloin or pork loin
- 4-6 cloves fresh garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- Fresh herbs (thyme or parsley)
- 2 tbsp olive oil or butter
- Salt and pepper to taste
Instructions
- Prepare the pork: Start by slicing the pork into medallions—about 1-inch thick.
- Season: Generously season both sides with salt and pepper.
- Sauté the medallions: In a skillet over medium-high heat, add olive oil or butter. Add the pork medallions and sauté until browned—about 3-4 minutes on each side.
- Prepare the sauce: Remove the medallions from the skillet, add minced garlic, and sauté until fragrant (about 30 seconds).
- Makin’ it creamy: Pour in chicken broth, scrape up bits, then stir in heavy cream and let it thicken slightly.
- Combining it all: Return the pork to the skillet and spoon the sauce over each medallion. Cook for an additional 2-3 minutes.
- Finishing touches: Sprinkle fresh herbs on top just before serving.
