Ingredients
- 2 sheets puff pastry
- 2 cups fresh blueberries
- 1/4 cup sugar
- 2 tbsp cornstarch or flour
- 1 tsp vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the blueberries, sugar, and cornstarch in a mixing bowl.
- Roll out the puff pastry on a floured surface and cut into rectangles.
- Place a scoop of the blueberry mixture on one side of each pastry rectangle.
- Fold the pastry over and crimp the edges to seal.
- Brush the tops with an egg wash and sprinkle with sugar.
- Bake for 15-20 minutes or until golden brown.
- Dust with powdered sugar before serving.
Notes
For a unique twist, you can substitute blueberries with other berries or add lemon zest or nutmeg.
