Ingredients

  • 2 sheets puff pastry
  • 2 cups fresh blueberries
  • 1/4 cup sugar
  • 2 tbsp cornstarch or flour
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the blueberries, sugar, and cornstarch in a mixing bowl.
  3. Roll out the puff pastry on a floured surface and cut into rectangles.
  4. Place a scoop of the blueberry mixture on one side of each pastry rectangle.
  5. Fold the pastry over and crimp the edges to seal.
  6. Brush the tops with an egg wash and sprinkle with sugar.
  7. Bake for 15-20 minutes or until golden brown.
  8. Dust with powdered sugar before serving.

Notes

For a unique twist, you can substitute blueberries with other berries or add lemon zest or nutmeg.
