Instructions
- Preheat your oven to 350°F (175°C). Prepare a muffin tin by lightly greasing it to prevent sticking.
- Cut your tortillas into rounds that fit comfortably in each muffin mold.
- Press each tortilla round into the greased muffin cups, molding them to create a cup shape.
- Heat a splash of oil in a large skillet over medium heat. Add the ground meat and season with cumin, chili powder, garlic powder, salt, and pepper. Cook until browned.
- Stir in the chopped bell peppers and onion; sauté for about 5 minutes until tender.
- Spoon the meat mixture into each tortilla cup, filling them generously.
- Sprinkle cheese over each filled cup to let it melt in the oven.
- Bake for 15-20 minutes or until the edges are golden and cheese is bubbly.
- Remove from the oven and cool slightly. Top with diced tomatoes, sour cream, and cilantro.
