- 4 boneless chicken breasts or thighs
- 1 cup Sweet Baby Ray’s BBQ sauce
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup carrots, chopped
- 1 cup mushrooms, sliced
- Salt and pepper to taste
- Your favorite herbs (like thyme or rosemary)
Instructions
- Prepare the ingredients: Start by dicing your onion and mincing the garlic. Chop the vegetables into bite-sized pieces.
- Layer in the crockpot: Place the chicken at the bottom of your crockpot. Add the chopped onions and garlic, then pour over that bottle of Sweet Baby Ray’s BBQ sauce until everything is well-coated.
- Let it cook: Cover the crockpot and set it to low for about 360 minutes or high for around 240 minutes, depending on your schedule.
- Add veggies: About 30 minutes before serving, stir in your chosen vegetables.
- Shred and serve: Once cooking is complete, shred the chicken with two forks and mix everything together. Serve it over rice, in sandwiches, or alongside warm bread.
Notes
For added flavor, try seasoning with garlic powder or smoked paprika. You can substitute chicken with turkey or diced tofu for a vegetarian option.
