- 24 oz Cream Cheese
- 2 cups Fresh Strawberries, chopped
- 2/3 cup Granulated Sugar
- 1 cup Heavy Cream
- 1 teaspoon Vanilla Extract
- 1 1/2 cups Graham Cracker Crumbs
- 6 tablespoons Unsalted Butter, melted
Instructions
- Prepare the Crust: Combine graham cracker crumbs and melted butter in a bowl. Press mixture into the bottom of a springform pan. Bake at 350°F (175°C) for 8-10 minutes; let cool.
- Make the Strawberry Layer: In a saucepan, combine chopped strawberries with sugar. Cook on medium until softened and mash lightly. Let cool completely.
- Mix the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add vanilla and heavy cream, beating until light and fluffy.
- Layer the Cheesecake: Spread half the cheesecake filling over the cooled crust, pour half the strawberry sauce over it, and repeat the layers.
- Chill and Set: Cover with plastic wrap, refrigerate for at least 4 hours or overnight.
- Final Touch: Whip heavy cream for topping and garnish with fresh strawberries before serving.
