- 2 cups grated fresh carrots
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 4 large eggs
- 1 cup vegetable oil (or unsweetened applesauce)
- 2 tsp baking powder

- 2 tsp ground cinnamon

- 1/2 tsp salt
- 8 oz cream cheese
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
- Mix the sugar, oil, eggs, and vanilla until well combined in another bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the grated carrots (and any optional add-ins like nuts or pineapple).
- Divide the batter between the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks.
- Beat the cream cheese and vanilla until smooth for frosting, then gradually add the powdered sugar until you reach your desired sweetness and consistency.
- Once the cakes are completely cool, spread frosting between the layers and over the top and sides of the cake.
Notes
Ensure ingredients are at room temperature for better mixing. Gently fold in the carrots to maintain batter lightness.
