Ingredients
- 2 lbs beef (like chuck roast or brisket)
- 4-5 medium potatoes (Yukon Gold or Russet)
- 4 cloves fresh garlic
- 1/2 cup butter
- 2 cups beef broth
- 1 onion (sweet or yellow)
- 2-3 sprigs herbs (like thyme or rosemary)
- Salt and pepper to taste
Instructions
- Prepare the ingredients: Peel and chop the potatoes into chunks and dice the onions. Mince the fresh garlic.
- Sear the beef: In a skillet, melt a tablespoon of butter over medium-high heat. Sear the beef for about 3-4 minutes on each side until it’s nicely browned.
- Layer in the slow cooker: Place the seared beef at the bottom of the slow cooker. Add the chopped onions and garlic, followed by the potatoes. Pour on the beef broth, and sprinkle with herbs, salt, and pepper. Add the remaining butter on top.
- Slow cook: Cover and cook on low for 6-8 hours or until the beef is fork-tender. For quicker cooking, set it on high for 3-4 hours.
- Serve: Once done, stir, taste, and adjust seasonings if needed. Serve warm with crusty bread.
Notes
Searing the beef is essential to develop deep flavor. Avoid overcrowding the slow cooker for even cooking.
