- 4 chicken thighs or breasts
- 2 cups mixed vegetables (bell peppers, zucchini, onions)

- 3 tablespoons olive oil
- 2 teaspoons dried Italian herbs

Instructions
- Prep your oven: Preheat your oven to 425°F (220°C).
- Marinate the chicken: In a bowl, toss the chicken with olive oil, minced garlic, Italian herbs, salt, and pepper. Let it sit for about 15 minutes to absorb the flavors.
- Prepare vegetables: Chop your vegetables into bite-sized pieces and place them on one side of the sheet pan. Drizzle with olive oil, and season with salt, pepper, and additional herbs.
- Combine everything: Place the marinated chicken on the opposite side of the pan alongside the veggies.
- Roast: Bake for 25-30 minutes, until the chicken is cooked through and the vegetables are nicely caramelized.
- Serve warm: Drizzle with lemon juice for a zesty finish before serving.
