- 2 boneless, skinless chicken breasts or thighs
- 8 oz tortellini (fresh or frozen)
- 1/2 cup pesto (homemade or store-bought)
- 1 cup mixed fresh vegetables (bell peppers, zucchini, broccoli, asparagus)
- 2 cloves garlic, minced
- 1 tablespoon olive oil or butter
- 1/4 cup grated Parmesan cheese
Instructions
- Cook the tortellini according to package instructions until al dente.
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken, seasoned with salt and pepper, and sauté until golden brown, about 5-7 minutes.
- Toss in fresh vegetables and sauté until just tender, about 3-4 minutes.
- Stir in cooked tortellini and pesto, mixing gently to coat.
- Finish with grated Parmesan cheese until melted.
- Serve hot, garnished with fresh basil.
Notes
For a vegetarian option, substitute chicken with mushrooms or tofu.
