Ingredients
- 4 bell peppers (red, yellow, or green)
- 1 lb ground beef (or turkey, chicken, or seasoned tempeh)
- 1 cup shredded cheese (cheddar, mozzarella, or pepper jack)
- 1 cup chopped onions
- 2 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup tomato sauce
- 1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the bell peppers by slicing the tops off and removing the seeds.
- Sauté the chopped onions and minced garlic in a skillet with olive oil for 3–5 minutes.
- Mix the sautéed onions and garlic with ground meat, herbs, spices, and tomato sauce.
- Stuff each bell pepper with the meat mixture, pressing down slightly.
- Top with cheese before baking.
- Bake in a covered dish for 25 minutes, then uncover and bake for an additional 10–15 minutes.
- Serve and enjoy with a side salad or low-carb veggies!
Notes
For extra flavor, consider adding mushrooms or spinach to the filling. Store leftovers in airtight containers for up to four days.
