Ingredients
- 4 cups Romaine lettuce, chopped
- 1 cup Grape or Cherry tomatoes, halved
- 1 cup Persian or English cucumbers, chopped
- 8 oz Salami, thinly sliced
- 6 oz Provolone cheese, cubed (or mozzarella)
- 1/2 cup Pepperoncini, sliced
- 1/4 cup Red onion, thinly sliced
- 1/4 cup Olive oil
- 2 tbsp Red wine vinegar (or balsamic vinegar)
- 1/4 cup Fresh herbs (basil and parsley), chopped
Instructions
- In a large bowl, wash and chop your lettuce into bite-sized pieces.
- Halve the tomatoes and cucumbers, adding them to the bowl alongside the lettuce.
- Thinly slice the salami and cheese, then toss them in next. Add sliced red onion and a handful of pepperoncini for that zing!
- Drizzle in a good quality olive oil and vinegar to taste. Always start with less; you can adjust as needed.
- Toss everything gently, ensuring the dressing coats all the ingredients.
- Lastly, sprinkle on freshly chopped herbs and give it another gentle toss.
- Let the salad rest for about 10-15 minutes before serving to blend the flavors.
Notes
For a vegetarian version, substitute salami with turkey or chickpeas. Feel free to skip cheese for a lighter take.
