  • Total Time: 60 minutes
  • Yield: 6 servings

Ingredients

  • 6 large eggs
  • 1 cup milk or cream
  • 1 cup shredded cheese (sharp cheddar and mozzarella)
  • 4 cups bread cubes (stale or toasted)
  • 1 cup sautéed vegetables (bell peppers, onions, mushrooms)
  • Optional: 1 cup breakfast sausage or bacon
  • Fresh or dried herbs and spices (like thyme, salt, and pepper)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish.
  2. Prepare your vegetable mixture by sautéing onions, mushrooms, and bell peppers in olive oil.
  3. Whisk the eggs in a large bowl, adding milk, salt, pepper, and herbs.
  4. Layer the bread cubes, then scatter the sautéed vegetables on top.
  5. Pour the egg mixture evenly over the layers.
  6. Sprinkle shredded cheese on top generously.
  7. Bake uncovered for 35-45 minutes until set and golden brown.
  8. Cool for a few minutes before slicing and serving.

Notes

Allow the casserole to rest for about 10 minutes to help it hold its shape. Use day-old bread for better texture.
