Ingredients
- 2 cups fresh blueberries
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the cake pan by buttering it generously and sprinkling brown sugar on the bottom. Arrange the blueberries over the sugar.
- Cream the unsalted butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, mixing in the vanilla extract afterwards.
- Combine the flour, baking powder, and salt in a separate bowl. Gradually mix this into the creamed mixture, alternating with the milk.
- Pour the batter over the blueberries in the pan, spreading it evenly.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Cool for about 10 minutes before inverting onto a serving plate.
Notes
For extra flavor, sprinkle lemon zest over the blueberries before pouring the batter. Ensure the cake cools adequately before inverting to avoid sticking.
