A nostalgic and delightful upside-down cake featuring sweet, juicy blueberries atop a moist buttery cake.

  • Total Time: 45 minutes
  • Yield: 8 servings

Ingredients

  • 2 cups fresh blueberries
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the cake pan by buttering it generously and sprinkling brown sugar on the bottom. Arrange the blueberries over the sugar.
  3. Cream the unsalted butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing in the vanilla extract afterwards.
  5. Combine the flour, baking powder, and salt in a separate bowl. Gradually mix this into the creamed mixture, alternating with the milk.
  6. Pour the batter over the blueberries in the pan, spreading it evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Cool for about 10 minutes before inverting onto a serving plate.

Notes

For extra flavor, sprinkle lemon zest over the blueberries before pouring the batter. Ensure the cake cools adequately before inverting to avoid sticking.
