Ingredients

  • 4 cups all-purpose flour
  • 1 packet active dry yeast
  • 2 teaspoons salt
  • 1 ½ cups lukewarm water
  • ¼ cup extra virgin olive oil
  • 1 cup mixed fresh herbs (rosemary, thyme, basil, oregano)
  • Flaky sea salt for sprinkling

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine flour, active dry yeast, and salt. Make a well in the center and pour in lukewarm water and olive oil. Mix until a dough forms.
  2. Knead the Dough: Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  3. First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place until it doubles in size, about 1-2 hours.
  4. Add the Herbs: Gently deflate the dough and fold in chopped fresh herbs.
  5. Second Rise: Spread the dough onto a greased baking sheet and let it rise again until puffy, about 30 minutes.
  6. Prepare for Baking: Preheat your oven to 425°F (220°C). Create dimples in the dough, drizzle with olive oil, and sprinkle with flaky sea salt.
  7. Bake: Bake for 20-25 minutes or until golden brown. Let it cool on a wire rack before slicing.

Notes

For a different texture, you can experiment with whole wheat flour. Dried herbs can be used but should be used sparingly.
