- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (15 oz) diced tomatoes or 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- Olive oil for sautéing
- Optional: additional vegetables like carrots or spinach
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté until translucent, about 3-5 minutes.
- Add minced garlic and sauté for an additional minute.
- Increase the heat to medium-high and add ground beef, breaking it up with a spatula and cooking until browned, 6-8 minutes.
- Stir in chopped bell peppers and any other desired vegetables, sautéing until tender, about 5 minutes.
- Mix in diced tomatoes or tomato paste and let it simmer for about 10 minutes.
- Before serving, sprinkle with dried or fresh herbs and adjust seasoning as needed.
- Serve on rice, pasta, or in taco shells as desired.
