- 2 ripe bananas
- 1 cup natural peanut butter (xylitol-free)
- 2 tablespoons melted coconut oil
- 1 egg (or unsweetened applesauce for egg-free version)
- 2 cups gluten-free oats
- Optional add-ins: cinnamon, blueberries, shredded carrots
Instructions
- Preheat the oven to 350°F (175°C).
- Mash the bananas in a large bowl until mostly smooth.
- Add the peanut butter and coconut oil, mixing until well combined.
- Incorporate the egg (or applesauce) until blended.
- Fold in the gluten-free oats until the mixture forms a sticky dough.
- Shape the dough into small balls or flatten into shapes on a parchment-lined baking sheet.
- Bake for 15-20 minutes, or until golden brown and firm to the touch.
- Cool the treats on a wire rack before serving.
Notes
These treats can be stored in an airtight container for about a week or frozen for up to three months.
