Ingredients

  • 2 ripe bananas
  • 1 cup natural peanut butter (xylitol-free)
  • 2 tablespoons melted coconut oil
  • 1 egg (or unsweetened applesauce for egg-free version)

  • Optional add-ins: cinnamon, blueberries, shredded carrots

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the bananas in a large bowl until mostly smooth.
  3. Add the peanut butter and coconut oil, mixing until well combined.
  4. Incorporate the egg (or applesauce) until blended.
  5. Fold in the gluten-free oats until the mixture forms a sticky dough.
  6. Shape the dough into small balls or flatten into shapes on a parchment-lined baking sheet.
  7. Bake for 15-20 minutes, or until golden brown and firm to the touch.
