Delightful and festive sugar cookie bars topped with colorful Easter Peeps, perfect for creating joyful memories with family.

  • Total Time: 40 minutes
  • Yield: 12 servings

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Colorful Easter Peeps, for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
  2. Prepare the cookie dough by creaming together the softened butter and granulated sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.
  3. Add in the eggs, one at a time, followed by the vanilla extract. Continue beating until everything is smoothly combined.
  4. Whisk together the all-purpose flour, baking powder, and baking soda in a separate bowl. Gradually add this dry mix to the wet ingredients and blend gently until just combined.
  5. Spread the cookie batter into the prepared baking pan, smoothing out the top evenly.
  6. Bake for 20-25 minutes until the edges are golden and a toothpick comes out clean.
  7. Let the bars cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  8. Decorate with Peeps and your favorite sprinkles once the bars are cool, letting them set for a bit.

Notes

To ensure the best texture, do not overmix the dough after adding the flour. Store leftovers in an airtight container at room temperature for 3-4 days.
